The Origins

From Morvan to Chablis

A daughter of Burgundy, Clotilde DAVENNE grew up in the countryside, at the foot of the Morvan. This childhood in nature forged her sensitive approach to the world. Everything is there: smells, flavors, colors, in a blend of sensations renewed daily.

With her nose in the air and her taste buds on alert, she learned plant scents: lime blossom, acacia, mint, crushed herbs, meadow dew, damp undergrowth... There were also those from the garden: artichokes, peas, beans, which she often crunched on the spot.

Later, Clotilde wanted to leverage this sensory potential: to make wine, a profession. That's how she decided to study oenology. A young graduate, she started with the reds of Beaujolais, discovered the sparkling vineyards of California, before returning to acclimatize the whites of Burgundy in Chablis. As a cellar master, she has been working on expressing terroirs through the wines she has been making since 1989.

1992

Mosaic Vineyard

The "Vignoble des Temps Perdus" was established in 1992 when Clotilde planted her first Chardonnay vines. Since then, driven by a passion for the land and for life, she has cultivated and cared for her vines with the utmost attention. Today, the estate comprises 30 hectares of small vineyard plots, with different grape varieties and ages, spread across the villages of Saint Bris, Chablis, and Irancy.

2005

Independence

In 2005, after 17 years, Clotilde started out on her own. Her conviction: no oak barrels, vinification entirely in stainless steel, manual harvests. The terroir expresses itself without filter.

Today, the estate covers 25 hectares and produces 17 cuvées across 5 appellations — from Petit Chablis to Grand Cru Bougros, including Saint-Bris, Irancy, and Crémant de Bourgogne.

Each cluster is hand-picked, sorted, and handled with respect. 17 vintages, all harvested manually.

Almost the entire production is hand-harvested.

No oak barrels in our cellars. Stainless steel hides nothing, it reveals. This is a radical choice in Chablis.

Systematic malolactic fermentation on all wines

Natural Culture

Ploughing, grassing-over, treatments reduced to a minimum. The earth lends us its plots, we return them to her intact.
